ZUCCHINI RISONI RECIPE
This recipe
will teach you how to make Zucchini Risoni. It is a quick
and easy recipe to make. The flavours of the risoni,
zucchini, mushrooms, onions and cheese mixed with the rest
of the ingredients gives the recipe a wonderful taste. I
like this Zucchini Risoni just as a meal but if you like it
can accompany another vegetarian dish such as curried
vegetarian sausages.
Zucchini
Risoni Ingredients
60g butter
500g risoni
1 Tbs olive oil
1 Tbs lemon juice
! Tbs red wine vinegar
2 cloves crushed garlic
500g zucchini sliced thinly
200g green onions sliced thinly
300g button mushrooms sliced thinly
1 Tbs coarsely chopped fresh oregano
1/2 cup coarsely grated parmesan cheese

Risoni Method
In a large saucepan of
boiling water cook the risoni uncovered until just tender.
In a large frying pan heat the oil with half of the butter
and cook the zucchini stirring till just tender and browned
lightly. Add remaining butter with the mushrooms, garlic and
oregano and cook stirring 2 minutes then stir in the juice
and vinegar. Remove from heat and stir in the onion and
cheese. Place the zucchini mixture in a large serving bowl
with drained risoni and toss the Zucchini Risoni gently to
combine.
